This cake was created for my friend Emma’s Australia Day party last year.  Not sure why it didn’t make it to this gallery until now!
I printed an outline of Australia that was the right size for the tray and used it as a guide for cutting the slabs of cake to shape, which I then sandwiched with blue buttercream.

I draped over some dark blue fondant to make the flag background, as you can see in the photo, trimming it neatly round the edges.

The Union Flag, Commonwealth Star and Southern Cross were then added using more fondant, cut to shape.
